This is the tastiest and easy beet recipe. Even if you are not a fan of beets, I promise you will love this recipe. Walnuts add the crunch and prunes add sweet notes to the salad.
Ingredients:
- 6 small beets
- 1 cup of pitted prunes
- 1 cup of walnuts
- 1/2 cup of sour cream
- 2 tbsp of mayonnaise
Instructions:
- Place beets into the pot and cover with water. Bring to the boil and cook until fork tender (about 20 minutes). It is better if they are a little crunchy and not fully tender.
- Chop walnuts and prunes.
- Once beets are cooked and cooled to room temperature, peel and grate them.
- Combine all of the ingredients together and serve.
