The Tastiest Beet Salad

Course: Appetizer, Salad, Side Dish

Ingredients

  • 6 small beets
  • 1 cup pitted prunes chopped
  • 1 cup walnuts chopped
  • ½ cup sour cream
  • 2 tbsp mayonnaise

Instructions

  • Place beets into the pot and cover with water. Bring to the boil and cook until fork tender (about 20 minutes). It is better if they are a little crunchy and not fully tender. 
  • Chop walnuts and prunes.
  • Once beets are cooked and cooled to room temperature, peel and grate them.
  • Combine all of the ingredients together and serve.
